Theeza's seafood Paella with a twist


400 g rice
150 g clams
150 g shrimp
150 g lobster or fish
1 small onion
2 cloves of garlic
150 g tomato
1.5 dl fish broth
Green peas
Sweet corn
8 spoon of olive oil
1 tea spoon of saffron
Parsley
Salt

Pepper


How to make it:

Put some olive oil in a "paella" or a wok and heat it up.
Put the small chopped onion in the oil , fry it until glassy, add cleaned shrimp, fish and lobster in it and fry it for a minute or two.
After that add the garlic and the smashed tomatoes and fry it some more.
Add the rice, fry it a little bit than add saffron and fish broth until all is submerged in it.
Cook it for 10 minutes and add salt according to your taste.
In a separate bowl braise the clams until they open. (throw away which didn't).
Add the clams, green peas and the corn to the dish and cook it until the broth evaporated.

Serve it with parsley on top.


!Tip : Serve it with a well chilled white wine. If you want you can add squid to.
