Theeza's Pineapple Wonder
6 Eggs
12 tablespoon of icing sugar
3 tablespoon of ground walnuts
8 tablespoon of flour
1 baking powder
1 pineapple compote
250 g margarine
250 g icing sugar
250 ml whipping-cream
1 vanilla pudding
Grated dark chocolate
How to make it:
Separate the egg whites from the yolk.
Mix the yolks with 12 tablespoons of icing sugar, the walnuts, the flour and the baking powder.
Beat the egg whites to a hard foam and add some into the dollop so it softens up.
The rest add it to the dollop also but carefully because this will make out the height of the cake.
Bake this dollop in a flour coated baking pan for around 20 minutes.
Cream:
Mix the margarine and the 250 g icing sugar until it becomes foamy.
Pour down the juice from the pineapple compote, put aside a little bit and the rest mix it with the pudding.
Cook it until it hardens. Put it aside to cool down.
When the pudding is cooled down mix it with the margarine.
With the rest of the juice smear the cake.
After the cake cooled down (this is important) we smear the cream onto it, put the pineapple pieces over it and add the whipping-cream on top.
After this we sprinkle it with the grated chocolate.
!Tip : Make sure the cake is fluffy and the dark chocolate is lumpish.
