Theeza's Greek Style Chicken
0,5 kg chicken breast
0,5 kg potatoes
3 onions
4 cloves of garlic
4 tomatoes
1 green pepper
Basil
Salt
Rosemary
Paprika
1 lemon's juice
Olive oil
1-1,5 dl water
The marinade:
1,5 dl sunflower oil
1,5 dl olive oil
Salt
Pepper
Paprika
Oregano
Rosemary
How to make it:
Mix all the ingredients for the marinade and put the chicken breast pieces into it. Leave them to marinade for 1-2 hours.
Peel the vegetables and cut them into medium size pieces, the garlic cloves into 4 pieces each.
Preheat the oven.
In a roast pan pour some oil and add the sliced potatoes. Add salt and pepper accoring to your liking and some rosemary.
Move it around so the potatoes are covered in the rosemary and oil. After this add the chicken and distribute evenly the onion, garlic,pepper and tomatoes.
Make sure the tomatoes are on the top and sprinkle it with fresh basil. Add a little salt on the vegetables and pour the lemonn juice over it.
Pour some water under it and cover it with alufoil.
Put it in the oven for 30-60 minutes until the chiken is done.
Remove the foil and add some paprika on it and fry it for 10-15 more minutes on 250 °C until the meat and the potato is a little bit crispy.
Usually I garnish it with french fries but it is not necessary.
!Tip : Definitely must be served with a glass of rosé wine. Recommend a french wine called "Rosé d'anjou".
