Theeza's traditional plate

5-6 potatoes
500 g pig crop
Garlic
Sunflower oil
Salt
Pepper
Parsley
Corn
Bell pepper
Green peas
Carrot
Rosemary
Red wine
Basil
Butter
Milk

How to make it:

Peel the potatoes and cut them into small pieces.
Cook the potatoes and when it is done crush them, add salt according to your liking.
Add a good spoonful of butter and around 1 dl milk and mix it well together until the potato begins to be foamy.
Take the pig crop and cut some slices.
Add salt and pepper to both side of the meat. Chop the garlic into small pieces.
Take a pan and add some oil in it and fry the meat with the garlic and rosemary.
When it is almost done add some red wine.(0,5 - 1 dl).
Braise the small cut vegetables in a pan and when it is done add some salt according to your liking, butter and basil.
Mix it well together and let it cool a little under a cooking top.
When it is done serve everything on a large plate one beside the other and decorate it with parsley and basil leaves.


!Tip : Serve it with a cool pilsner or rose wine.
