Theeza's Chicken Salad - Hungarian dish

Theeza's chicken salad


500 g drumstick (chicken leg)
5-6 Carrots
2 Turnip
1 Celery
1 Onion
340 g Green pees

340 g Corn
370 g pickling cucumber
2 egg yolk
1/2 tablespoon mustard
Sunflower oil
Salt
Pepper

How to do it:

Put the chicken legs in a pot and cook it around 30 minutes.
When the meat is cooking you have to clean the soup from the foam.
Add the vegetables and cook it until it is done.
Add salt according to your taste. Strain the vegetables from the soup(the onion is not needed).

From this soup you can make a chicken soup same as described here only with chicken.
Grate the vegetables from the soup (carrots, turnip, celery) into a big bowl, add the corn and the pees. Cut the pickling cucumbers into small pieces and add it to the rest.
Add salt and pepper according to your taste.
Add the mustard to the yolks add mix it up. Add little by little oil to it and stir it in the same direction. This way you will have a home made mayonnaise. Add so much oil as much mayonnaise you want.
Add the mayonnaise the the rest and stir it together.
Serve it with fresh baguette or ciabatta.

!Tip : Recommend a chilled white wine with it.
