Roasted shrimp and fish Italian style
4 fillets of firm white fish
250 g shrimp
500 g cherry tomatoes
50 g black olives
25 g pine nuts
Basil leaves
Olive oil
Salt
Pepper
How to make it:
Preheat the oven to fan 180°C.
Take the fish fillets with the skin on, and season with salt and pepper.
Heat the olive oil in a large pan and cook the fillets skin side down for 2-3 minutes until just crisp.
Also fry the shrimps in a little olive oil until they change color.
Transfer the fish to a large roasting tin, skin side down and the shrimp also.
Cut the cherry tomatoes in half and scatter around the fillets.
Cut the olives in half and scatter over the tomatoes.Season with pine nuts.
Put the tray in the oven and bake for 12-15 minutes, until the fish and the shrimp is tender .
Remove from the oven and scatter the tomatoes with the basil leaves.
Drizzle with a little extra virgin olive oil.
!Tip : Serve it with rice and a glass of well chilled white or rose wine.
