Funghi á la Theeza - Transylvanian dish

Funghi á la Theeza


30 small slice of bacon
10 pieces of mushrooms 
6 -7 eggs
1 pack of  cherry tomatoes
Chive
Smoked cheese
Parmesan
Parsley
Salt
Pepper


How to prepare:

Slice the bacon in small thin slices and fry it until it s almost done.
Pill the champions and get rid of the stem. Grind the smoked cheese and fill the mushrooms heads. Put them into a bowl. Cut the cherry tomatoes in half and put them between the mushrooms. 
Sprinkle them with salt and pepper. 
Put it in the oven until the tomatoes and the mushrooms turn soft.
Add the bacon with the grease and the chive.
Make an omelet from the 7 eggs and add in it a little of sour cream.
Chop the parsley fine. 
Pour over  the mushrooms the omelet and add the parsley and the fine filed Parmesan on top.
Put it back in the oven until the omelet is ready. 
Serve it with bred and white wine.

Tip! : Best to use a heatproof bowl so you can see it when it is ready, eliminating overcooking , burning the food.
