Tortellini in tomato sauce
1 bag of tortellini of your preference
4 sun ripened tomatoes (sweet)
Olives
1 middle size onion
Ham if you prefer it with meat
Parmesan cheese
Mozzarella
Fresh basil or parsley
Salt
Pepper
How to make it:
Boil the tortellini in salted water until it surfaces, about 3-4 minutes usually.
Put a frying pan on the stove with a little olive oil and let it heat up. Chop the onion as fine as possible and fry with the sliced olives until it becomes glassy (with the ham if you do it with meat).
Slice the tomatoes also and add it to the onion and olives and let it fry until it becomes a sauce, stirring it to time to time.
Add salt and pepper according to your taste.
Chop the basil and the mozzarella and add it to the the rest. Boil it until the mozzarella melts.
Pour the sauce over the tortellini and add freshly grated Parmesan cheese over it. Garnish it with fresh basil leaves or parsley.

!Tip : You can add mushrooms to the dish if you like it and also best with a fine white wine.
